Our Australian Limoncello is made from locally grown lemons sourced from the mountain ranges of the NSW Central Coast, and the result is a vibrant, aromatic spirit that holds its own alongside any Italian original.
What Makes a Good Limoncello?
Limoncello is made by steeping lemon zest in neutral spirit, then blending the infused liquid with water and sugar to create a sweet, citrus liqueur. The quality lives or dies on the lemons. Thin-skinned, aromatic varieties with high essential oil content in the zest produce a more complex, fragrant result than generic supermarket fruit.
NSW Central Coast lemons are grown in a cool, elevated climate with good rainfall, which concentrates flavour and produces fruit with intensely aromatic zest. That's the foundation Wildstreak works from, not imported concentrate, not artificial flavouring, just real lemon zest and time.
The result is exactly what a limoncello should be: a burst of bright citrus flavour, sweet and aromatic, with a refreshing finish. At 30% ABV, it's lighter than a gin or vodka, which makes it perfect as a stand-alone pour rather than something you mix away. It works as a digestivo, a before-dinner aperitivo poured over ice, or the key ingredient in a handful of simple cocktails that taste far more effort than they are.
How to Serve It
The classic Italian approach is the right one. Keep the bottle in the freezer and pour it ice-cold into a small chilled glass. The cold temperature slows the sugar slightly and lets the lemon aromatics come through cleanly. Sip it slowly, it's a digestivo, not a shot.
If you're hosting, it's also a beautiful aperitivo poured over crushed ice with a twist of lemon zest. Cocktail Ideas
While limoncello is best appreciated neat, it also shines in a handful of cocktails where you want real lemon flavour without squeezing fresh juice.
Limoncello Spritz: 60ml Wildstreak Limoncello, topped with chilled sparkling water and a handful of ice. Add a sprig of fresh mint and a lemon wheel. Bright, refreshing, and lower in alcohol than a standard cocktail, good for a long afternoon in the beer garden.
Lemon Drop Martini: 45ml Wildstreak Vodka, 30ml Wildstreak Limoncello, 15ml fresh lemon juice, shaken hard with ice and strained into a chilled glass. The limoncello adds sweetness and depth without sugar syrup. Rim the glass with sugar if you like it on the sweeter side.
Limoncello Tonic: 45ml limoncello over ice, topped with tonic water and garnished with a slice of lemon. Simple and elegant, the citrus oil in the zest of the garnish lifts the whole drink. Works particularly well with a premium tonic that has some bitterness to balance the sweetness of the liqueur.
What to Eat Alongside It
Limoncello's affinity with food goes beyond the digestivo tradition. The bright acidity and sweetness make it a natural match for:
- Seafood grilled prawns, smoked salmon, a simple fish dish. The citrus amplifies the brininess of fresh seafood beautifully.
- Lemon-based desserts lemon tart, panna cotta with citrus, or a simple lemon sorbet alongside a small pour of limoncello. A classic Italian combination.
- Fresh goat's cheese the acidity of the cheese and the sweetness of the limoncello balance each other well on a cheese board.
- Almond cake or biscotti the nuttiness plays beautifully against the lemon. A small limoncello and a piece of almond biscotti is exactly how you'd close a long, relaxed lunch.
