We're lucky enough to have both ends of that story sitting on our shelves right now - a fresh, just-bottled 2024 vintage and a 2017 that's had almost eight years to develop into something remarkable. Here's what makes each of them worth your time.
Why Semillon Loves the Hunter Valley
Semillon has been grown in the Hunter Valley since the early 1800s. It thrives here for a reason - the warm days and cool nights of the lower Hunter give the grapes a unique combination of ripe flavour and bright acidity that you simply don't find in other regions.
Our Semillon vines at IronBark Hill are some of the oldest on the property, planted at the foot of the Brokenback Range on well-drained sandy loam soils. These old vines produce small berries with concentrated flavour - the foundation of everything we do with this variety.
What sets Hunter Semillon apart from every other white wine is its ability to transform. Picked early, fermented cool, bottled without oak - it starts life as a lean, citrusy wine that seems almost understated. Then, given time, it develops a richness and complexity that rivals anything in the wine world.
Young: 2024 TJD The Individualist Semillon
Our 2024 TJD Semillon comes from the oldest vines on the estate - hand-picked, gently pressed, and vinified to let the fruit do the talking.
A vivid core of green apple, lemon zest, and lime dances across the palate, while the crisp acidity lends a dry, mouth-watering finish that lingers. Delicious now, yet destined to develop beautifully over time.
This is Hunter Semillon in its youth - electric, vibrant, with a bright acid line that practically hums. It's the kind of wine that works brilliantly with fresh oysters, a prawn salad, or a plate of sashimi. Don't be fooled by its lightness; there's real structure here, and it's that structure that gives it the backbone to age.

Aged: 2017 Museum Premium Release Semillon
Fast forward seven years, and things get interesting. Our 2017 Museum Release has spent all that time quietly evolving in bottle - no oak, no intervention, just time doing its work.
Pale, straw-yellow in colour, it delivers vibrant citrus notes dominated by fresh lemon and lime. The finish is clean, crisp, and refreshingly dry, enhancing its zesty profile.
The tasting note captures the citrus well, but not how different the texture feels. There's a golden hue now, a toasty quality, a creaminess that builds through the mid-palate. The acid is still there - it's Hunter Semillon, it's always there - but it's softened into the wine rather than leading it.

A Few Tips for Cellaring Semillon at Home
- Store it cool and dark. Around 12-14°C is ideal. A cupboard away from the kitchen is fine if you don't have a wine fridge.
- Keep it on its side if it's under cork. This keeps the cork moist and prevents it drying out.
- Be patient. Hunter Semillon really starts to sing around 5-7 years, but the best examples can go 15-20 years and beyond.
- Buy a few. Open one every year or two and track how it develops. That's half the fun.
